Coral Trout Sashimi Ceviche: Freshness Redefined

This refreshing and vibrant dish is made with sashimi-grade fish, freshly caught from the ocean. Zane and Casey, the brains behind the recipe, enjoyed this delightful treat while exploring the stunning Ningaloo, in Western Australia. The Coral Trout Ceviche is the perfect blend of freshness and zest, capturing the essence of the coastal paradise.

So, let’s see what all the fuss is about! 

Ingredients 

  • Around 450g sashimi grade fish suitable for eating raw (our favourite is coral trout) 
  • 1 x red onion 
  • 1 x jalapeno 
  • 6 x cherry tomatoes 
  • Lime juice – freshly squeezed from 4-6 limes (enough for the fish to soak in) 
  • Handful of coriander roughly chopped 
  • Salt & pepper  
  • 1 x avocado (optional) 

 

Method: 

  1. Cut the fish into small, even cube (around 1/2-inch in size). 
  2. Place the fish in a non-reactive bowl (glass or stainless steel) and generously cover with the freshly squeezed lime juice.  
  3. Gently stir the fish to ensure it’s evenly coated in lime juice. Ensure all pieces are submerged.  
  4. Cover the bowl and refrigerate for 15-20 minutes, or until the fish turns opaque. This process ‘cooks’ the fish with the acidity of the lime juice. 
  5. While the fish is curing, prepare the red onion, jalapeño, tomatoes, and any other vegetables you’re using. Remember to soak the red onion in ice water. 
  6. Once the fish is cured, drain any excess lime juice (but reserve a tablespoon or two for extra flavour if needed).  
  7. Gently add the prepared vegetables, coriander, and any optional add-ins (except avocado) to the fish. 
  8. Season generously with sea salt and freshly ground black pepper. Gently toss everything together. 
  9. Just before serving, gently fold in the diced avocado to prevent it from becoming mushy. 
  10. Serve with corn chips and BOOM!
