This month’s recipe comes from one of our Wonderlanders, the Wheatland Wanderers and it’s an absolute flavour bomb. Their version of butter chicken, made in the Instant Pot, is quick, comforting, and full of Indian-inspired spices perfect for keeping you warm during this chilly weather!
Whether you’re cooking by the coast, tucked into a bush camp, or simply need a no-fuss weeknight meal, this one is worth adding to your rotation!
Step 1: Sauté the spices
Set your Instant Pot to sauté mode – or if you don’t have an instant pot, heat up a pot to medium heat. Add the garlic-infused oil and cook off the spice packet from the kit for 2–3 minutes, to bring out the aroma and depth of flavour.
Step 2: Add the chicken
Stir in the diced chicken and sauté for a few minutes until it begins to brown.
Step 3: Simmer & seal
Pour in the sauce from the kit and stir well. Pop on the lid, set to pressure cook for 30 minutes, and let the Instant Pot do its thing.
Step 4: Release & prep sides
Once the 30minutes is up, allow the pressure to release naturally for 5 minutes, then quick release the rest. This will make your chicken lovely and tender.
While that’s happening, microwave (or fry) your pappadams, then serve everything up!
This meal is just as delicious the next day – we warm it up between destinations and enjoy it for a quick and easy lunch on the go.
