After a big day of adventure, a sweet homemade treat is always a nice way to end the day. This no-bake Cashew Slice, shared by one of our lovely Wonderlanders, Naturally Nourished Life, is a tasty snack that’s good for your body and feels like a little reward. 

It’s perfect for the whole family, great for kids, and just as tasty for adults too! Made with simple, natural ingredients, it’s easy to make ahead of time and keeps well in your fridge. Whether you’re camping off-grid or relaxing after dinner, this slice is a real treat. 

Ingredients:

Base: 

  • 1 cup almonds (or walnuts for a softer texture) 
  • Just under 1 cup (about 180g) Medjool dates, pitted 
  • 2 tablespoons cacao powder (optional but adds a rich chocolate flavour) 
  • Pinch of sea salt 

 

Cashew Cream Layer: 

  • 1 ½ cups raw cashews (soaked in water for at least 4 hours or overnight, then drained) 
  • ¼ cup (60ml) coconut oil, melted 
  • ¼ cup (60ml) maple syrup or raw honey 
  • 2 tablespoons (30ml) lemon juice 
  • 1 teaspoon vanilla extract 
  • 2–4 tablespoons (30–60ml) water, as needed

Method

Step 1: Prepare the Base 

  1. Place the almonds, dates, cacao powder (if using), and sea salt in a food processor. 
  2. Blend on high for 1–2 minutes, stopping to scrape down the sides, until the mixture becomes crumbly but sticks together when pressed. 
  3. Line a square or rectangular tin (approx. 20cm x 20cm) with baking paper. 
  4. Tip the mixture into the tin and press it down firmly and evenly with clean hands or the back of a spoon. 
  5. Pop the tin in the freezer for 15–20 minutes while you make the topping. 

 

Step 2: Make the Cashew Cream Layer 

  1. Add the soaked cashews, melted coconut oil, maple syrup or honey, lemon juice, vanilla, and 2 tablespoons of water to a high-speed blender or food processor. 
  2. Blend on high for 2–4 minutes until silky smooth, scraping down the sides as needed. 
  3. Add more water, one tablespoon at a time, until the mixture reaches a thick but pourable consistency. 

 

Step 3: Assemble the Slice 

  1. Remove the base from the freezer. 
  2. Pour the cashew cream over the base and use a spatula or spoon to smooth it out evenly. 
  3. Gently tap the tin on the bench to remove any air bubbles. 

 

Step 4: Chill and Slice 

  1. Place the slice in the fridge for at least 4 hours or in the freezer for 1–2 hours until fully set. 
  2. Once firm, lift it out of the tin using the baking paper and transfer to a chopping board. 
  3. Slice into squares or bars using a sharp knife. 

 

Step 5: Store and Enjoy 

  • Store in an airtight container in the fridge for up to 5 days, or freeze for up to 2 months. 
  • If frozen, let the slice sit at room temperature for 10–15 minutes before serving for the ideal texture.

                     

Tips  

Fancy a little extra indulgence? Drizzle some melted dark chocolate over the top before setting.  

  • Add desiccated coconut or chopped nuts to the topping for added crunch. 
  • This slice is dairy-free and gluten-free, perfect for sharing with all kinds of eaters on the road.
