Family-Friendly Chilli Con Carne Recipe for Chilly Nights

This delicious chilli con carne is made in the Thermomix with a Cookidoo recipe, shared by one of our Wonderlanders, Mel. It’s mild, full of flavour, and easy to prepare, ideal for busy nights, weekend camping trips, or casual family dinners. Even the kids love it! It’s the kind of dish that brings everyone together, whether you’re gathered at the table or enjoying dinner by the fire.

Ingredients:

  • 150g brown onion, finely chopped
  • 2 garlic cloves, minced
  • ½–1 tsp dried chilli flakes (adjust to your heat preference)
  • 30g olive oil
  • 1 tsp ground cumin
  • 250g red capsicum, diced
  • 2 tbsp tomato puree
  • 400g canned tomatoes
  • 1 heaped tsp meat stock paste
  • 500g beef mince
  • 400g canned kidney beans, rinsed and drained
  • Fresh coriander leaves, to serve
  • Tortillas, baked and broken into chips, to serve
  • Sour cream (optional) to serve

Method

Step 1: Chop the base
Place olive oil, onion, garlic and red capsicum in mixing bowl.
Chop 3 sec / speed 7

Step 2: Build the flavour
Add canned tomatoes, chilli flakes, cumin and coriander.
Sauté 7 min / 120°C / speed 2

Step 3: Add protein & seasoning
Add beef mince, tomato puree, meat stock paste, chilli sauce (if using) and salt.
Cook 15 min / 100°C / Reverse speed / Slow stir

Step 4: Final touch
Add kidney beans.
Cook 5 min / 100°C / Reverse Speed / Slow stir
Season to taste if needed.

Tips

  • Serve with rice
  • A sprinkle of spring onion or even a handful of crushed tortilla chips on top works just as well for a fresh finish.
