This month, Wonderlander Irena is bringing some spice to your mealtime with her vibrant Mexican Feast! Packed with colour, bold flavours, and simple steps, it’s perfect for sharing with friends or family on the road, at the campsite, or in your own kitchen. And, as always, it’s easy to adapt for vegan or gluten-free diets to suit your needs.
Step 1: Mash the avocados in a large bowl, then mix in ¼ of a finely chopped red onion and half a punnet of diced cherry tomatoes. Squeeze in the juice of one lime, season with salt, and stir in coriander if you like.
Step 2: Cook the filling. In a pan, fry the finely chopped brown onion over medium heat for about 5 minutes until soft. Add the minced garlic and your choice of protein. minced meat, vegan mince, or lentils and cook for another 5–7 minutes until golden. Stir in the taco seasoning, tomato paste, and maple syrup, then add just enough water to cover. Lower the heat, cover, and let it simmer for 3–5 minutes until the water reduces and the filling is thick and flavourful. Season with salt to taste.
Step 3: Toast Tortillas & Cook Corn. While the filling is simmering, toast the tortillas on a BBQ or stovetop for 1–2 minutes per side. Cook the corn on the cob on the BBQ or in boiling water for 8–10 minutes until tender.
Step 4: Assemble & Serve. Spread the filling onto the warmed tortillas, then top with guacamole, salsa, coleslaw, and corn chips. Serve immediately and enjoy!
