Forget the morning scramble over the stove—sleepy mornings just got a whole lot tastier! This Blueberry Pancake Bake from Wonderlanders @our.wandering.life is the perfect way to whip up a delicious and healthy breakfast (or brunch!) that’s ready to devour in under 20 minutes. Calling all pancake lovers and busy bees, this recipe is about to become your new BFF! 🫐

Ingredients: 

  • 1 cup oats 
  • 2 bananas 
  • 4 eggs 
  • Pinch of baking powder 
  • 1/4 tsp vanilla essence 
  • 1/3 zucchini 
  • 1 scoop vanilla protein or collagen

Method  

  1. Place all ingredients in a blender and blend on high until mixture is smooth and creamy. 
  2. Pour mixture into a baking tray and top with your favourite frozen berries 
  3. Bake on medium-high temp in the Weber or oven for 15 minutes or until mixture is firm 
  4. Top with yoghurt or maple syrup (or both!) and enjoy!
