This recipe is from Few Laps Around the Sun, and it’s one of our absolute go-to meals on the road! Dumplings are cheap, fun to make with a group, and packed with flavour. The ingredients usually last in the fridge or pantry, making them perfect for caravanning, camping, or a fuss-free weeknight dinner.

Step 1: Mix all the filling ingredients together in a bowl.
Step 2: Lay dumpling wrappers out on baking paper.
Step 3: Spoon about 1 tbsp of filling into the centre of each wrapper and fold/press together. Repeat with all wrappers.

Step 1: Heat a non-stick pan over medium heat with 2 tsp of oil.
Step 2: Place dumplings in the pan and cook until the base is golden brown.
Step 3: Add ½ cup of water to the pan, cover with a lid, and steam for ~7 minutes until most of the water has evaporated.

Serve your dumplings however you like, straight from the pan, in soup, or tossed into a curry. Some of our favourites: coriander and spring onion, sweet soy, fried shallots, or a drizzle of chilli oil.
