This month’s recipe comes from one of our Wonderlanders, The Kiwi Van Life, and it’s a creamy, cheesy treat you’ll want to add to your caravan meal rotation. Their Prosciutto Carbonara is quick to prepare, packed with flavour, and perfect for a quick dinner after a day of exploring.
Whether you’re parked by the coast, tucked away in the bush, or just want a no-fuss meal that feels like a little luxury, this one’s a winner.
Step 1: Brown the Onion and Garlic
Heat a pan on medium with a splash of oil. Finely chop the onion and garlic, then brown gently for a few minutes.
Step 2: Cook the Prosciutto
While the onion and garlic cook, chop the prosciutto into small pieces and add to the pan. Cook together for 3-5 minutes until the prosciutto is cooked through.
Step 3: Cook the Pasta
Bring a pot of water to the boil and cook the fresh pasta until al dente.
Step 4: Add Chicken Stock and Cream
While the pasta cooks, add the chicken stock to the pan and cook for 2 more minutes. Then pour in the cream.
Step 5: Thicken the Sauce
Let the cream simmer for about 5 minutes, stirring often, until it thickens slightly. Add the Parmesan cheese and Italian herbs, and cook for another 5 minutes, stirring constantly.
Step 6: Combine and Serve
Drain the pasta and toss it through the sauce. Mix well and serve immediately. Dig in and enjoy!
