15 Minute Easy Garlic Pasta

This month, one of our Wonderlanders Irena shares her go-to Simple Garlic Pasta, a quick, delicious dish that’s perfect when you want big flavour with minimal effort.

Using just a handful of ingredients, this pasta is super easy to whip up and works perfectly for caravanning or camping meals. Plus, it’s easy to make vegan or gluten-free by swapping ingredients to suit your needs.

Ingredients: 

  • Packet of pappardelle pasta (GF if needed)
  • 8 cloves garlic, finely chopped
  • ¼ cup olive oil
  • 1 tbsp butter (use vegan butter like Nuttelex for a dairy-free option)
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • A good handful of chives and parsley (fresh or dried)
  • Chilli flakes, Parmesan, or nutritional yeast for seasoning

Method  

Step 1: Cook the pasta in boiling salted water according to the packet instructions (usually 8–10 minutes), then drain and set aside.

Step 2: While the pasta cooks, heat the olive oil, chopped garlic, and butter in a pan over low to medium heat. Let it cook gently for 5–7 minutes, stirring occasionally, until the garlic is soft and fragrant, be careful not to brown it.

Step 3: Remove from heat, then stir in the garlic powder, onion powder, and herbs.

Step 4: Add the drained pasta to the pan and toss well to coat in the garlicky oil mixture.

Step 5: Serve immediately, seasoned with chilli flakes, parmesan, or nutritional yeast to taste.

Tips  

This dish is all about simple, fresh flavours. Use fresh herbs if you can, but dried works well too. Want it vegan? Swap the butter and Parmesan for vegan alternatives. It’s quick, comforting, and perfect for when you want a fuss-free meal.
