This month’s recipe comes from Wonderlander Irena, and it’s an absolute go-to for those nights when you want something fast, filling, and packed with flavour.
Her Easy Satay Noodles are a brilliant mix-and-match dish. You can use whatever veggies or protein you’ve got on hand, and the creamy satay sauce pulls it all together in minutes! Think stir-fry meets comfort food with a satay twist.
Easy Satay Sauce:
Optional: handful of choc chips, nuts, or extra cinnamon sugar
Step 1: Cook your protein in a pan over medium-high heat until golden and cooked through, then set aside.
Step 2: Prepare the noodles according to packet instructions (usually a quick soak or boil), then drain and set aside.
Step 3: In the same pan, stir-fry your vegetables for a few minutes until just tender.
Step 4: Mix your satay sauce in a small bowl, stir together the peanut butter, soy/tamari, miso paste, garlic, sesame oil, and a splash of boiling water until smooth and pourable.
Step 5: Add the protein and noodles back into the pan with the veg, pour in the sauce, and toss everything together until heated through and well coated.
Step 6: Serve hot, topped with fried shallots for a crunchy finish.

Use whatever veggies or protein you have on hand, leftovers work great! Keep miso and peanut butter stocked for quick flavour boosts. For gluten-free, swap soy for tamari and noodles for rice noodles.
