This month’s recipe comes from Road to Nowhere AU, and it’s a sweet little lifesaver for when you’ve got just one ripe banana left on the bench.
Their easy air fryer banana bread is the ultimate “make-something-from-nothing” snack, ideal for those days when supplies are low, but cravings are high. You don’t need a full kitchen, just a few pantry staples and a trusty air fryer. Perfect with a morning cuppa or as an afternoon pick-me-up!
Optional: handful of choc chips, nuts, or extra cinnamon sugar
Step 1: Preheat air fryer to 170°C. Line a small loaf tin (they use the smallest Flat Stacks oven container).
Step 2: In a bowl, mash banana and whisk in egg, melted butter, sugar, and vanilla/cinnamon.
Step 3: Add flour and salt, stir until just combined, don’t overmix!
Step 4: Fold in any extras like choc chips or nuts.
Step 5: Pour into your lined tin and bake for 25–30 minutes, or until golden and a skewer comes out clean.
Step 6: Cool slightly before slicing. Enjoy warm or store for later (if it lasts that long!).
Perfect for when you’re running low on supplies and have one lonely banana left on the bench… the ultimate quick snack or perfect coffee companion.
